  Tasting Notes

This is the inaugural release of this mega 100% Cabernet Sauvignon, with all the fruit sourced from the oldest Cabernet vines on the Estate. It is to Cabernet as “The Command” is to Shiraz!! This Project has been kept well under wraps by Richard Sheedy and Alister Ashmead, and was intended as a very special release in honour of Lorraine Ashmead, Owner and guiding light of the Elderton Estate. Special it is!!

The colour is an early indication of the intensity of the wine. Blackberry and cassis notes waft from the glass, with hints of so much more lurking in the background. The flavours explode and expand in the mouth, with each taste going on for what seems an eternity. This wine has undoubtedly got voluptuous fruit characters and a myriad of others flavours, but also has a very well defined framework, that gives it great balance and poise right through to the finish. Almost 36 months is new and old French oak has only softened it out, and almost 12 additional months in bottle prior to release means it is delicious from the moment you first taste it.

But it has plenty of time evolve and develop into something even more special. Extremely limited in quantity.
