Medium purple red. Fragrant aromas of cassis, violets and rose petals, beautifully integrated with high quality new French oak.
Quite finely structured with good acidity and lovely drying tannins that give the wine good persistence of flavour.
The first Cabernet selected for Pikes Reserve label. This is a really stylish wine that shows definite elegance and finesse. Worth cellaring for up to 10 years. The 1998 vintage will be seen as one of the best for red wine years in South Australia in the past 25 years.

VINEYARD: Pikes Polish Hill River Estate vineyard
HARVEST: March/April 1998
SUGAR AT HARVEST: 12.0-12.5 Baume
FERMENTATION: Inoculated with pure yeast culture, 100% Stainless steel, temperature controlled 19-28C for 12 days, post ferment maceration for further 3 weeks, prior to pressing in tank press.
OAK TREATMENT: 100% new 225L French oak for 24 months
FILTRATION: None
FINING: Light gelatine fining after final racking
BOTTLING DATE: May 2000
ACIDITY: 6.34 grams/litre
ALCOHOL: 12% Alc/Vol
PH: 3.64
SO2: 36mg/l Total SO2
