  Tasting Notes

Whilst the rest of Australia always was crazy about Shiraz, Western Australia almost seemed to shun it, preferring to concentrate on Cabernet Sauvignon. This release proves the West has great potential.
With the appearance the wine has a great depth of dark blood red with a hint of purple. It shows no signs of bottle age at this stage.
This wine has an incredible amount of perfume with a classic white pepper nose over the top of roasted meat. There is plenty of fruit with plums and cherries wrapped up in a spicy package, which includes some nutmeg and cloves. There is just a little hint of toast from some oak but this is very much a fruit based wine.
Tasting the wine and the first thing you notice is that it is medium bodied, not a big heavy style. In addition to the multitude of flavors on the bouquet there is also some earthy, mineral notes on the palate. The finish sees plenty of both acid and tannin ensuring a comfortable lifespan in the cellar. It will be soft and mellow in about 8 to 10 years, but don’t feel like you’re committing a crime if you open a bottle now as it is very charming and quite smooth.
Try the wine with a classic like Steak Diane. The spicy nature of the wine will highlight the piquancy in the sauce that accompanies the steak.
