The status of this flagship wine continues to grow. This release will only further the reputation. The Barossa Valley has shown itself to be a region that is perfectly suited to ripen varieties suited to warmer conditions. Shiraz fits into this category, and only fully mature vines with low yields are selected for the Command label. Even though the wine is released with several years age it looks like a very young wine with a dark ruby red color with barely a hint of browning. The bouquet is a heady brew of super ripe plum and dark cherry fruit, some chocolate nuances, with a big blast of vanilla and coconut from judicious use of predominantly American oak. There is a rich heavy feel to the wine when it’s in your mouth. You simply cannot ignore the wine. All of the flavors showing on the nose are present on the palate with the fruit flavor almost taking on a stewed character. There is a real firm grip from the tannin at the back of the palate and this will be a wine for the future. It will gracefully age for at least another 15 years, yet the rich fruit makes the wine approachable now. If you open a bottle now give it plenty of air by decanting it vigorously to allow exposure to the air. Also do this a few hours before you drink the wine. Try it with a sharp aged cheddar style or Reggiano cheese. The cheese will have a sharpness that will contrast with the wines opulence. |
