Pat Carmody lets each vintage speak for itself. A cool ripening period will see a wine with lifted perfumes and spice. With his fine Shiraz it also brings the elusive white pepper so often is it talked about yet rarely is it obtained. This wine just about explodes with a white pepper aroma. The palate is no letdown with the spicy notes and a sour cherry fruit flavor taking over from the obvious pepper on the nose. There is just a hint of oak, and this is the way Pat likes it, as he prefers to see the fruit that he grows rather than the oak which is grown in foreign lands. For the record Pat uses a mix of both French and American oak. All Craiglee Shiraz have plenty of aging potential and this one is no exception. The wine has quite a high acid level combined with some grip from tannin. It will comfortably age for a decade and quite possibly for a lot longer. Play up on the pepper theme and match the wine with pepper steak. The pepper flavor really brings out the flavor of the meat and this will be repeated with the wine. What a great combination. |
