This wine has always been a sleeping giant of Stephanie Toole’s impressive portfolio of Mount Horrocks wines. Perhaps the recognition will come with this wine, quite possibly her finest release. Just one look at the wine and you get an immediate impression of the superb wine about to unfold. It is super dark red with purple and blue tinges. Simply multitudes of aromas are present when you put the glass to your nose. Plum and cherry characters abound as well as other flavors evident, including some charred oak derived notes, a hint of earth and mineral like components and a little meaty, bacon like characters over the top of the perfumes. The palate is a virtual repeat of the bouquet. There is a rich a layered texture which can only come with low yield, high concentration fruit. This will require at least 5 years in the bottle, but the wine will then drink well for a long time, say at least another 6 to 8 years after this period. When trying the wine in the immediate future, finish a meal with the wine and serve it with medium flavored but creamy textured cheese. Here the cheese will mop up and coat some of the tannins and allow you to enjoy the fruit even more. Down the track as a mature wine the dish most suited will be rich flavored red meats with full flavored sauces. Roast beef with a red wine reduction sauce would be ideal. |
