There is little doubt that Roman Bratasiuk has a remarkable touch with red wine. He extracts as much flavor and structure he can, in so doing he produces wine that has aging potential far beyond his colleagues. The appearance of this wine gives you some idea of the concentration, as it is deep and dark to the point of resembling ink more so than wine. It is so dark that you can’t see that the wine has not been filtered. This is a highly perfumed wine. There are rose petals and a dusty, powdery character. with mulberries and blackcurrants. Additionally some rich vanilla flavors from the new oak barrels. After promising so much on the nose it is reassuring to see that the palate delivers. The fruit melds together well with finely grained tannins without the finish seeming to be bitter. This adds many years to the aging potential of the wine. Drink a few bottles immediately to appreciate the depth of fruit but do be very patient with all other bottles for this wine is a 10-15 year cellar proposition. Look towards heavy and rich dishes with plenty of sweetness in the sauces. Avoid food that has spice heat as this will clash with the toasty oak that becomes more apparent as the wine opens up. Rich braised dishes are the most obvious and would be the most successful in matching. The wine would also work well with a plate of cheese. Avoid blue vein, washed rind and particularly ripe white mould but virtually all other styles would be compatible with this fine wine. |
