Print this Wine         1998 Elderton Cabernet Sauvignon   NURIOOTPA, BAROSSA VALLEY                 January Release   Cabernet Sauvignon       Too often the Barossa Valley is dismissed as a producer of anything other the Shiraz. Certainly the success of that variety has made it difficult for all the other grape varieties. Yet Cabernet Sauvignon has typically been very successful in the Barossa, and this wine is no exception. The vintage of 1998 is very highly regarded; one of the best for many years, and that also shows in this wine. Look at the wine and you see a very dark, almost impenetrable deep purple, black. The color still extends all the way to the rim. This is probably pointing to the extreme concentration of flavor with this wine. One sniff and the wine is upon you with an amazing chocolate character. This is bitter dark chocolate. Underneath this is some mulberry and blackcurrant fruit, not overly sweet but very ripe flavors and finally there is plenty of charred oak and vanilla, straight from new barrels. There is tremendous depth of flavor across the palate. This wine is not shy as it rapidly fills your mouth. A great key to the success of this wine is the balance between oak and fruit. It is too easy to dose up the wine with layers upon layers of new oak and whilst this might make the wine look attractive when young it will eventually turn the wine into a bitter, prematurely aged number. Perfect balance has been achieved here, as neither the fruit nor oak dominates. The strong and persistent tannins at the back of the palate complete the picture. Give the wine another 6 to 8 years to allow these tannins to soften and by this time the fruit and oak will have fully integrated. They are in balance and because of that you can enjoy the wine now however it will be even better down the track. Whilst a young wine the best dishes to serve with this wine would be hearty, braised dishes with red meat, root vegetables and a slightly sweet sauce.
