  Tasting Notes

This is an amazing wine for the standard release, considering there is the mighty “Command” in the line up. The grapes used in this wine are picked from vineyards that are over 40 years of age. This shows in the depth of fruit flavor and rich texture of this wine. As an added bonus this vintage was spectacular in the Barossa Valley and the team at Elderton have taken full advantage of this.
On the nose there is an amazing over-riding character of mocha. This blend of coffee and chocolate is surely a sign of greatness in wine and it is quite unusual to see it so prevalent in a young wine. This character is not there in isolation as there are plenty of rich plum, raspberry and blueberry fruits, sweet and ripe. As well as that there are some spicy notes, in particular aniseed.
Almost overwhelming is the impression as you taste the wine, but it doesn’t go too far because there is a balance between the various and many components. The fruity nature of the wine is most obvious, however there is abundant oak with coconut being added to the mix. The texture is thick and almost chewy, no doubt the wine benefits from mature vines that consistently produce grapes with super concentrated fruit intensity.
The spicy flavors are also very much part of the wine with an overlay of earthy characters which makes the wine even more complex and desirable. The finish is big and quite heavy. The tannins are not shy. They will assist in the slow maturation of this wine.
The quality of the fruit in combination with the structural factors means that you can confidently put the wine down in a well-maintained cellar. It will age and hold up for a very long time, possibly hitting its peak somewhere between 12 and 15 years of age. Still the balance of all the different parts of the wine means that it is quite easy to open up a bottle or two in the very near future.
If you try the wine soon make use of its spicy character and don’t worry about foods that have plenty of fire. The really strong nature of the fruit will cope with most spicy dishes. Try the wine with a chilli beef casserole and you will be surprised how well the two will match.
Likewise a Thai style red duck curry would also work well because of its heat; sweetness and the coconut character are found in both the wine and the dish.
