  Tasting Notes

The development of this label from an interesting but obscure wine to one of the most highly sought after examples of the variety has been truly amazing. Each succeeding vintage sees an extra layer of flavor as the vines mature. The 1998 vintage has been highly acclaimed in South Australia and Victoria. It is obvious from this wine that the harvest was equally successful in the West.
Firstly the appearance is indicative of the superb wine to follow. There is a deep dark red with a purple tint. There is lots of life ahead for this wine and it has plenty of fruit crammed into it to last for a long time.
There are many perfumes to this wine. Firstly there are some floral characters. Violets and truffles are the first characters that you can detect, followed by the more obvious fruit characters such as raspberries, plums and mulberries. There is some spicy notes that add to the blend as well. In addition to these flavors there is some toastiness from the oak and a general earthy character. This is a serious and complex wine.
All of the multitude of flavors seen on the bouquet can be found on the palate. Here they tend to intermingle and change as the wine is given more exposure to oxygen. Indeed the complexity of the wine is the dominant feature, more so than any single flavor. There is a vibrant meaty texture to the wine as it swirls around inside the mouth. Low yields and perfectly ripe fruit are the main contributing factors here.
This wine will benefit from a couple of years in the cellar. It will drink well now and probably age for a long time, however I believe it will be at its best with 4-6 years cellar age.
Drink the wine now with braised dishes using the more flavorsome cuts of meats, slowly stewed to extract all that flavors and soften the chewy texture. In a few years time serve the wine with roasted beef and a simple reduction sauce, perhaps spiked up with a little bit of mustard or horseradish.
