Given the renowned fickle nature of dessert wines this is a remarkably consistent wine. The method of production plays the most important role in producing this consistency.
Stephanie Toole is very clever and uses the Cordon Cut method to virtually ensure a premium dessert wine every year. Prior to the normal harvest time the cordons on every second vine are cut to ensure raisining of the outer grape bunches whilst the bunches still attached to the vine will become even more concentrated with varietal fruit flavor.
This vintage is perhaps even a little richer and more luscious than the past couple, although the similarities far outweigh the differences. On the bouquet there is a multitude of flavors with the ripe citrus fruit characters being immediately obvious, along with the sweeter notes of stone fruit like apricots. This is a complex wine, which is quite amazing seeing that it has never seen wood. In addition to the citrus fruit there is an overlay of orange peel and marmalade characters that gives the wine a bittersweet edge.
The palate is marked by a rich and unctuous texture. There is more than enough residual sugar to qualify the wine as a dessert wine yet it is not cloying and cordial like at the finish. This is due to the high level of acidity which makes the wine feel clean and crisp.
Ideal whilst it is young and fresh this wine will develop superbly over a few years, particularly because of the high acid component. Drink it chilled with fruit based desserts such as citrus or stonefruit tarts and mixed berry compotes.
