This is yet another great dessert wine made using the unique method of cutting the grape bearing vines, or cordons, therefore allowing accelerated ripening and dehydration of the berries. The color is a pale gold but quite deep indicating concentration of sweet, ripe fruit. The bouquet is a delightful melange of citrus and stonefruit flavors, noticeably oranges and apricots with a hint of toffee or brulee. Fresh ripe fruit mingles with the toffee and caramel characters on the palate with is luxurious and viscous. The flavors linger on for a very long time yet the finish is crisp, almost to the point of dryness due to zesty acidity. Many dessert wines made in Australia, and elsewhere throughout the world for that matter, tend to be whole meals in themselves with sweetness and richness but finish cloying due to a lack of precise acid. This does not occur with this wine and it is ideal for food matching. Right now the wine is drinking beautifully, as the fruit is more to the fore than the toffee characters which will tend to become more evident with bottle age. Many people will prefer these complex mature styles and this wine can be safely cellared and in 4-6 years it would develop along these lines. Desserts that use toffee and caramel would match well with this wine also desserts that feature citrus or stonefruit will pick up on the fruit character in the wine. |
