There is great controversy in Australia at the moment over the virtues of Chardonnay that has not seen either fermentation or maturation in oak barrels, despite the fact that the French in Chablis have been making "Unwooded Chardonnay" for hundreds of years. Stephanie Toole recognizes the potential to draw from Chablis' heritage, and with the right fruit is excited about the prospect of doing so. There is an explosion of fruit flavors on the bouquet. Of this wine. An even mix of tropical and citrus fruits with pineapple, banana, grapefruit and lime all being evident. Again on the palate the intensity of fruit is just as strong. This is a powerful and rich wine with additional characters such as marmalade and toffee coming to the fore on the back palate. Very satisfying and mouthfilling this wine has obviously not been made from under-ripe or over-watered fruit. There is a battle for supremacy between the citrus and tropical flavors with the latter ultimately prevailing. Plenty of zesty lively acid at the finish gives the wine an extra dimension at the end of the palate. The wine is well suited to clean fresh flavored foods; fish, seasonal vegetables or salads with appropriately tangy dressing would bring the wonderful flavors out of this wine. |
