All in moderation to create a seamless and long finish...... 1999 Clarendon Hills "Hickinbotham" Cabernet Sauvignon CLARENDON January Release Cabernet Sauvignon This wine strikes early!! Blackcurrants, hints of chocolate, dry spices and lovely toast characters abound on the nose. On the palate the fruit shows optimum ripeness with blackcurrant, elements of leather even cassis. The wine spent 12 months in new French barrique on lees, adding further to its complexity, and bottled without filtering or fining. Make no mistake this is a rich intense wine that has years ahead of it. Undoubtedly drinkable now, but it will evolve into an even more seductive wine over time. Cellaring potential: at least 10 to 15 years...... 1999 Clarendon Hills "Hickinbotham" Grenache CLARENDON January Release Grenache Wonderful aromas of raspberry, cherry, Asian spices and hints of pepper greet you on the nose. The palate is extraordinarily elegant, but with great intensity. Berry flavors are accentuated, notes of minerals, dry spices and even licorice make this a very complete wine. There is just a hint of oak, but very subtle given Pat’s predominant use of old oak...... 1999 Hewitson "L'Oizeau" Shiraz MCLAREN VALE January Release Shiraz Ruby, purple in color of this wine gives an indication of the depth of flavor of this wine, sourced from 70+ year old vines. Beautifully perfumed nose with plum and mulberry, and hints of spice and even violets. On the palate its plum heaven, dark and dense yet with some lovely red fruit characters giving the wine lift. The wine shows great balance, and a really well crafted mouthfeel. Beautifully concentrated without a hint of over extraction. The French oak integrates well.
