Sir Paz Estate
Location:   The vines of Sir Paz Estate are planted on red volcanic soil in the southern hills of Victoria's Yarra Valley. Grapes experience an extended ripening period during autumn, allowing the winery to produce wines of exceptional depth and finesse.

Soil:   The soil of Sir Paz Estate is a limited belt of rich terra-rossa volcanic soil in the Yarra Valley of clay composition.
Harvest:   Early Mar-Early May

Vines are cropped at 1 ½ tonnes per acre, and all grapes are picked by hand. French Oak Hogsheads are exclusively used in maturation, with a minimum of 30% new oak for all Sir Paz estate red wines.
